Patrons will crave their delicious, vegitariano, tostada salad, incorporating frijoles, arroz espanol, shredded lettuce, shredded cheese, on corn tortilla shell, with a savory sweet [rojo] vino vinaigrette, delivering a near religious experience, as if the grapes were sourced from the very vine stock that once graced the Camino Real, the pride of Junipero Serra. Add on to that chopped tomato, olive, sour cream, and a generous ladle of house especial nopal (cactus) pico de gallo! Con carne +$2.00.
I am thinking that a hearty vegano vegetable soup would hit the spot, something traditional, with a Spanish flare. The house soup might be salado al gusto for patrons, so the dish can also constitute a strong 'heart healthy' option. Traditional sopas would go well with this, as a side.
I have even heard rumors that a recipe for prickly pear syrup is in the works! I bet that would taste good, on vanilla ice cream, perhaps pancakes, or perhaps even to flavor a Coca Cola?!
Considering iconography as well, check this out ... for vegetariano, a red chili. For vegano, a green chili. As a logo for the genera, a red chili next to a green chili, with a fat white onion in the middle. The red, white and green, symbolizing a plethora of wholesome vegetables, and delicious cooking!
