  Yosuke is fast, professional, and very reasonably priced. I have used several knife sharpening services over 20+ years working in restaurants and professional kitchens and haven’t found a better service. Great for professional chefs or for anything a home chef uses.

  Yosuke is truly a master of his craft. He has fixed our knives that have been chipped, or incorrectly sharpened by amateurs (who we will never patronize again). He is very precise and our knives are extremely sharp and easy to use. We have also purchased 3 knives from him, and they are all of excellent quality and value. His service is second to none

  We had several average quality kitchen knives and two high quality Japanese knives sharpened here, with very happy results. Turnaround was two days at a very busy time just before Christmas, and the price was quite reasonable. I will definitely use Knives Edge Japan again!

  Yosuke does an amazing job, and is a pleasure to work with. We aren’t professional chefs – just avid home chefs that understand the importance of a quality sharp knife in preparing good food. He has sharpened knives for us for the last 2 years, and each time it feels like a brand new knife. He works on our Japanese and western knives, and is happy to discuss the type of edge we’d like so that the knife suits our needs. We were so happy to be introduced to Yosuke, and highly recommend him.

  Yosuke is a true crafts person. He cares about his craft and his customers. His sharpening work was superb for both my stainless and carbon knives. He is polite, listens and finished his work when he said he would. In a word, character!
