If it only works in competition, it can be discussed, but it will not be a primary focus. Real-World application is king. Classes are small intentionally so that the instructor can be very hands on and direct in his instruction. Classes usually very cardio heavy from the very start. You might start with practicing proper wrestling movements and then transition into single leg take-downs in order to you get you sweating and to get the blood flowing. From there the class might pair-off, or work in rotations practicing a single move (such as escaping side guard escape one particular way), and then over the course of the class that single move evolves into a more complex set of movements that allows you to gain dominance over your opponent.
