Upon entering this odd repository of curd transformation you wriggle through a wall of holes made to look like a slice of Swiss cheese. This certainly set the stage for the experience ahead!

After passing through the crowds viewing the fascinating display of “Cheesecloths of the World”, we entered the live demonstration of rennet harvesting. I recommend this only for the strong-of-stomach in the group.

We next saw actual cheesewizards (their term) “pulling” mozzarella cheese to perfection. Near the end everyone gets their own tub of mascarpone and a spoon to enjoy while participating in the traditional Italian cream cheese Tarantella led by Emil the proprietor on his violin made of string cheese.
