His style is understated where he demands the flavors of the food speak for themselves and enhanced only to bring out regional nuances where the food came from. We had scallops from Maine, caviar from Russia (or Western Alaska), and beef from Japan... all he prepared so carefully with love as if he's preparing it for his mother's last meal on her last birthday as she floats into eternity. He could cook for titans of the culinary industry or for Presidents.”
